Why the ribeye?

Ask a farmer what they cook on their own birthday and you’ll hear the same answer every time. The ribeye sits along the upper rib, a muscle that does almost no work, so it carries fat inside the grain instead of around the edge. That marbling is what makes the meat melt in your mouth.

On grass-fed cattle it can’t be rushed. Without corn or grain, the marbling comes from an animal that grew slowly on open pasture, one season at a time. It’s the difference you can taste in a single bite, which is exactly why we’d rather give you four of them than try to explain it.

Thaw slow, salt early

Overnight in the fridge, never the microwave. Salt an hour ahead and pat the surface bone-dry — a wet steak steams instead of searing.

Hard sear, then butter

Cast iron, ripping hot, three to four minutes a side. Drop the heat, add butter, smashed garlic and thyme, tilt the pan and spoon it over the top for a minute. That basting is the whole recipe.

Pull early, rest longer

Grass-fed runs about 30% faster than grain-fed. Pull it 5°F before your target and rest it eight full minutes before the knife goes in.

What most folks ask

How big are the ribeyes?

Each one is hand-cut to about 12 oz — TODO — roughly an inch thick, which is the sweet spot for a hard sear and a warm red center. Four of them feed four people generously, or two people twice.

Why ribeye and not filet?

Filet is tender but mild. Ribeye carries the fat inside the muscle, which is where beef flavor actually lives — and on grass-fed cattle that marbling only comes from time on pasture. It’s the cut that shows you the difference fastest, so it’s the one we lead with.

Does grass-fed steak cook differently?

Yes, and this is where most people go wrong. It’s leaner, so it cooks roughly 30% faster than grain-fed. Pull it 5°F before your target, rest it a full eight minutes, and it’ll be the best steak you’ve made at home. Overcook it and it’ll be tough — that’s true of every grass-fed steak on earth. Kai Borghesan, our head butcher, wrote a card on exactly this and it ships in your first box, so you don’t have to take our word for the timing.

Do I have to commit to anything?

How much freezer space do I need?

A rough rule: one cubic foot holds about 25–35 pounds. Most members find a single freezer drawer covers a delivery. You choose the size and frequency, so you’re never buried.

Fresh or frozen?

Frozen at peak and vacuum-sealed, which holds quality better than a “fresh” case that’s been sitting for days. Thaw what you need, when you need it.

Where do you deliver?

Most of New England, New York, and New Jersey — via home delivery or 1-day ground shipping, from Portland, ME to central NJ. Enter your zip when you build your box to confirm.

Can I really pick every cut?

Yes — that’s the Build Your Own plan. Choose everything from everyday ground beef to cuts your butcher rarely carries. Prefer we handle it? Curated builds a balanced mix around your preferences, and you can exclude anything.

Is this like organic?

We go beyond it. Organic certification is expensive and often co-opted by large operations — much “organic” beef is still feedlot-raised on organic grain. Our farms pledge no pesticides, herbicides, antibiotics, or hormones, and we audit against the Walden Way.
