Beef Roast 3 Ways
Sometimes when you receive a beef roast in your share, it can be tough to think of something to make other than a classic pot roast dinner. While we’ll never say no to a delicious pot roast, we wanted to share some of our other favorite ways to cook a beef roast. We hope you enjoy these different flavors and techniques!
ROAST BEEF WITH THYME BUTTER

A thyme butter rub and a nice slow cook in the oven makes this roast recipe a perfect weekend evening dinner option. The best part is that the leftovers can be used in a variety of creative ways.
RED ROASTED ASIAN BEEF STEW

This stew has your familiar root vegetables, and lends itself well to substitutions if needed! We swapped the daikon for a watermelon radish (conveniently an heirloom variety of daikon) instead.
APRICOTS, DATES, AND MEAT TAGINE

With very minimal prep and hands on time, this tagine is full of flavor and has a bit of a kick from the spices. It’s balanced out nicely by the sweet dried (and then cooked) fruits!
