Fluke with Soy-Balsamic Glaze
Fluke is a type of flounder, and this is a fast and flavorful method for this delicate and mild fillet.

Ingredients:
- 12 oz Walden fluke (cut into 4 × 3-oz, or 6 × 2-oz pieces)
- Sea salt & pepper
- 1 Tbsp olive oil, plus additional to rub on fish
- Handful pea pods, stringed & sliced
- ½ small red onion, thinly sliced
- Grapeseed oil
- 1 Tbsp soy sauce
- 1 Tbsp balsamic vinegar
- ⅛ tsp (or more) harissa paste
- One slice fresh ginger
- Pinch garlic powder
- Yuzu or lemon juice, to taste
Directions:
- Season fish – Pat fillets dry, rub the darker side with olive oil, and season both sides with salt and pepper.
- Mix sauce – Whisk all sauce ingredients in a small pan; set aside.
- Prep veg – Microwave pea pods 30 sec (covered) to soften; slice onion.
- Sear fish – Heat a large skillet over medium-high with a thin film of grapeseed oil. Place fish oiled-side down; sear until lightly browned, 1–2 min. Transfer to a plate, seared side up.
- Cook veggies & finish fish – Reduce heat to medium, add pea pods and onion; sauté ~1 min. Spread veg out, return fish (seared side up) on top, cover, and cook medium-low 5 min until just opaque.
- Sauce & serve – While fish finishes, gently heat sauce to a simmer. Plate veggies and fish; spoon sauce over the top and serve immediately (rice is perfect alongside)
