Smash Dumpling Tacos with Walden Pork

Ingredients:
- 1 lb Walden ground pork
- ½ cup chopped cilantro
- ½ cup chopped green onion
- 1 Tbsp grated ginger
- 1 Tbsp grated garlic
- 1 Tbsp soy sauce
- ½ Tbsp sesame oil
- ½ Tbsp rice vinegar
- 1 tsp ground white pepper
- 6-inch Walden flour tortillas
- ½ head each Napa and purple cabbage, finely sliced
- 1-2 carrots, julienned
- ½ cup each chopped fresh cilantro and fresh green onion
- ¾ cup mayonnaise
- ¼ cup sriracha
- Salt and Pepper to taste
- 3 Tbsp soy sauce
- ½ Tbsp finely chopped green onion
- ½ tsp finely chopped cilantro
- 1 tsp each sugar, rice vinegar, sesame oil, red pepper flakes, and toasted sesame seeds
- >1 Tbsp water to taste
Directions:
- Make the slaw– Combine napa and purple cabbage, carrots, cilantro, green onion, mayonnaise, sriracha, salt and pepper in a bowl and toss well. Ideal if marinated in the fridge for at least an hour before serving
- Make the sauce– Combine soy sauce, green onion, cilantro, sugar, rice vinegar, sesame oil, red pepper flakes, sesame seeds and water in a small jar with a lid. Shake well.
- For the tacos – Mix pork and all ingredients in a bowl. Once well combined, spread a thin layer of pork mixture across one side of a tortilla making sure to spread the meat all the way to the edge of the tortilla.
- Place tortillas pork-side down into a skillet on medium-to-medium-high heat, putting pressure or weight on the top of the tortilla to ensure meat cooks evenly and does not shrink away from the edges of the tortilla. Fry until crispy then flip and fry the bare side of the tortilla for just a couple of minutes. Remove from pan and immediately fold in half to preserve the classic taco shape. Serve dumpling tacos with coleslaw and dumpling sauce on the side.
