Slab Pork Belly Cooking Tips

Pork belly is used all over the world. In many Latin American countries, chicharrones are made with cubed bits of pork belly. In Italy, pork belly is used for porchetta. Germans use it for schlachtplatte. This versatile cut also makes appearances in dishes across Asia, from Okinawa to the Philippines. Needless to say, pork belly is loved for its fatty, and flavor packed profile.

HOW TO COOK

Slab Pork Belly works well with recipes that call for frying, braising, smoking, and low and slow cooking. Note that our pork belly does not come with skin.

ROASTING 

  1. Preheat your oven to 350 degrees F.
  2. Rub a liberal amount of kosher salt into both sides of the pork belly.
  3. Season with pepper and drizzle with olive oil. 
  4. Place the pork on a cooking rack and roast for 2 to 2 ½ hours. 
  5. Meat should be very tender and falling apart. 
  6. Let the pork belly rest for 10 minutes before slicing! 

BRAISING

  1. Preheat your oven to 350 degrees F. 
  2. Pat your pork belly dry with a paper towel to help it brown evenly.
  3. Rub a liberal amount of kosher salt into both sides of the pork belly.
  4. Dice any vegetables you’d like to use in your braise (fennel, onions and garlic work great).
  5. Drizzle some olive oil into your dutch oven and brown vegetables over medium-heat. 
  6. Add your pork belly and brown both sides of the meat.
  7. Slowly add liquid to dislodge those flavor packed brown bits stuck to the bottom of your dutch oven. This process is called “deglazing” – beef broth, cooking wine, or even water works great. 
  8. Add liquid (beef broth or water) until the level is halfway up the sides of your pork belly. Bring the mixture up to a boil before placing in the oven. 
  9. Cover your dutch oven with a tight lid and place it into your preheated oven. Let cook until fork-tender (about 2 ½ hours). You can check occasionally to test tenderness and add liquid if the level starts to drop.
