This is the ham that evokes warm childhood memories and inspires classic flavor pairings. The sweet, slightly fiery glaze, infused with dry sherry and mustard, forms a caramelized crust over salty, succulent ham. We know that while traditionalists may miss the pineapple and maraschino cherries, others may like trying something new. Serves: 10 – 12
Time: 1 Hour

Ingredients:
- 1 (7-to-8-pound) bone-in ham
- Whole cloves
- 1 1⁄2 teaspoons dry mustard powder
- 1 cup brown sugar
- 1⁄4 cup dry sherry
Directions:
- Preheat your oven to 325°F. Place the ham on a rack in a large roasting pan. Score the ham diagonally left to right, then right to left, creating a diamond pattern. Stud each diamond with a whole clove for added aroma and spice.
- Pour one to two cups of water into the bottom of the pan to keep the ham moist. Bake the ham uncovered, allowing approximately 30 minutes per pound. Cook until internal temperature reaches 145°F.
- In a bowl, mix the mustard powder and brown sugar, then stir in the dry sherry to create a thick glaze. About 20 minutes before the ham is done, generously spread this mixture over the surface. Return it to the oven and continue baking until a deep, golden crust forms. If you like more crunch on your glazed ham, cook it for an extra 3-5 minutes, and keep an eye on it.
